Healthy Mango Matcha Popsicles

Just because the calendar is leaning into pumpkin spice and apple everything doesnโ€™t mean summer has to end. These Mango Matcha Popsicles are my little rebellion against the early arrival of fallโ€”bright, creamy, and made with clean, feel-good ingredients. Sweet, tropical mango layers meet earthy, lightly sweetened matcha, creating a popsicle thatโ€™s as refreshing as it is visually striking.

I love this recipe because itโ€™s simple, healthy, and playful. The mango layer is naturally sweetened with a touch of honey and brightened with lime, while the matcha layer adds that subtle, grassy note that makes each bite feel sophisticated yet fun. Mango Matcha Popsicles

Mango Layer (makes about 10 popsicles)

  • 1 ยฝ cups frozen mango chunks
  • Juice of 1 lime
  • ยผ cup water
  • 2 tbsp honey (or maple syrup)

Matcha Latte Layer

  • 1 cup whole milk
  • 6 tbsp honey
  • 1โ€“2 tbsp matcha powder (adjust to taste)
  • 1 tsp vanilla extract
  • Pinch of sea salt

Directions

  1. Blend the mango, lime juice, water, and honey until smooth. Pour into popsicle molds halfway and freeze while preparing the matcha layer.
  2. Blend the milk, honey, matcha, vanilla, and salt until smooth. Pour over the frozen mango layer, tapping molds gently to remove any bubbles.
  3. Insert sticks and freeze until solid, several hours or overnight.
  4. Unmold and enjoy immediately, or store in an airtight container in the freezer for up to two weeks.
