Ingredients

  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed light brown sugar
  • 1 large egg + 1 large egg yolk, room temperature
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1 tsp salt
  • 1/4 cup creamy peanut butter
  • 1/4 cup fruit jam or preserves
  • 1 ENJOU Dubai Peanut Butter Chocolate bar

Directions

  1. Prep the pan: Preheat oven to 350°F and line an 8×8” square baking pan with parchment paper, leaving some overhang at the sides.
  2. Mix wet ingredients: In a large bowl, whisk together melted butter and brown sugar until combined. Add the egg, yolk, and vanilla, then mix until smooth.
  3. Add dry ingredients: Fold in flour, baking powder, and salt until no streaks remain.
  4. Transfer batter: Spread the batter evenly into the prepared pan.
  5. Add swirls: Drop spoonfuls of peanut butter and jam over the batter (about 6–8 spoonfuls of each). Use a butter knife to gently swirl them in.
  6. Top with chocolate: Break the ENJOU Dubai Peanut Butter Chocolate bar into squares and place evenly on top.
  7. Bake: Bake for 25–30 minutes, until the edges are set, the top is golden, and a butter knife inserted in the center comes out clean.
  8. Cool & cut: Place the pan on a wire rack to cool. Once cooled, lift the blondies out with the parchment paper and transfer to a cutting board.
  9. Serve: Slice into 18 triangles and enjoy every gooey, chocolatey bite.
