Watermelon Popsicles with Chocolate Drizzle

Ingredients
- 1 small watermelon, cut into triangle slices (leave the rind on)
- 2 tsp coconut oil
- ¼ cup chocolate chips
- Flaky sea salt, for sprinkling
- Popsicle sticks

Directions
- Slice your small watermelon into triangle-shaped wedges, keeping the rind on each piece.
- Insert a popsicle stick into the bottom of each rind so they resemble little watermelon pops.
- Line a baking sheet with parchment paper and lay the watermelon slices flat.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Melt in 15-second intervals, stirring after each, until smooth and glossy.
- Drizzle the melted chocolate over the watermelon slices.
- Sprinkle lightly with flaky sea salt.
- Place the tray in the fridge for 10–15 minutes to let the chocolate set, or enjoy immediately if you can’t wait!
