Single-Serve Pistachio’s & Cream Rice Krispie Treat

A chewy, crunchy Rice Krispie treat is one of those desserts that never goes out of style — but this version feels like it leveled up in the best possible way. Sweet, buttery marshmallow meets creamy white chocolate and rich pistachio spread, and suddenly this nostalgic classic turns into something that feels almost bakery-worthy. It’s playful, a little fancy, and completely irresistible.

We made this as one beautifully jumbo Rice Krispie treat — because if you’re going to make one, why not make it dramatic? It’s thick, golden, and generously swirled with pistachio spread so you get those dreamy, nutty ribbons in every bite. Of course, you can absolutely divide it into two smaller treats if you’re feeling generous. But the oversized version? It just feels special. Like the kind of dessert you proudly place on the counter and slice into with intention.

The texture is truly everything here. The marshmallows melt into buttery sweetness that coats every crisp grain of cereal for that perfect chew. The white chocolate chips soften just enough to create creamy pockets throughout, while the pistachio spread melts into swirls instead of disappearing completely. And those chopped pistachios? Ingredients

  • 1 teaspoon unsalted butter
  • ½ cup marshmallows
  • ½ cup Rice Krispie cereal
  • 2–3 tablespoons white chocolate chips (plus more for topping)
  • 1–2 tablespoons pistachio spread (I use the brand Stesh)
  • 2–3 teaspoons chopped pistachios (plus more for topping)
  • Sprinkle of sea salt for topping

Directions

  1. In a small saucepan over low heat, melt the butter and marshmallows together until fully smooth and melted. Stir frequently so nothing browns.
  2. Pour the melted marshmallow mixture over the Rice Krispies in a bowl. Stir quickly to coat the cereal evenly.
  3. Add in the white chocolate chips, pistachio spread, and chopped pistachios.
  4. Gently fold together until just combined. Do not overmix — you want visible ribbons and pockets of pistachio spread throughout.
  5. Press into a lined or lightly greased pan (or shape free-form for that jumbo look).
  6. Top with extra white chocolate chips, extra pistachio spread, and extra chopped pistachios.
  7. Let set slightly, slice, and enjoy.

How to Make the Perfect Rice Krispie Treat

  • Keep the heat low. High heat makes marshmallows stiff instead of soft and gooey.
  • Work quickly. Once the marshmallow mixture hits the cereal, stir and shape before it firms up.
