Ingredients (Makes 12โ14 cookies)
- ยฝ cup (113g) unsalted butter, room temperature
- 1 cup (200g) granulated sugar
- 1 large egg (about 50g), room temperature
- 1 ยฝ teaspoons vanilla extract
- ยผ teaspoon almond extract
- 2 cups (250g) all-purpose flour
- 1 teaspoon (5g) salt
- ยพ cup (135g) colorful sprinkles

Homemade Buttercream Frosting
Directions
Step 1: In a stand mixer fitted with the paddle attachment, beat the butter and sugar for about 45 seconds, until combined.
Step 2: Add the egg, vanilla extract, and almond extract. Beat for about 1 minute, until smooth and well combined.
Step 3: Scrape down the sides of the bowl, then add the flour and salt. Mix until fully combined and no streaks of flour remain.

Step 4: Use a spatula to gently fold in the sprinkles.


Step 5: Form the dough into a flat oval disc, wrap in plastic wrap, and refrigerate for at least 1 hour (or overnight).


Step 6: When ready to bake, preheat the oven to 350ยฐF and line two baking sheets with parchment paper.
Step 7: On a lightly floured surface, roll the dough to about ยผ-inch thickness. Cut into bunny shapes and carefully transfer to the prepared baking sheets.


Step 8: Bake depending on size:
- Mini cookies: about 8 minutes
- Medium cookies: about 10 minutes
- Larger cookies: about 12 minutes
Bake until the edges are just lightly golden.
Step 9: Let the cookies cool completely before transferring to a wire rack.
Step 10: Once fully cooled, pipe small swirls or dots of buttercream for bunny tails and dip into sprinkles for that cute, fluffy lookโor enjoy them plain!
