How to Make Funfetti Crumb Cake
1. Prepare the Pan
Preheat your oven to 325ยฐF.
Line an 8×8-inch square baking pan with parchment paper on all sides.
2. Cream the Butter and Sugar
In a stand mixer fitted with the paddle attachment, combine the butter and granulated sugar.
Beat on medium speed until light and fluffy, about 2 minutes.
3. Add the Eggs and Extracts
Turn off the mixer and add the eggs one at a time, beating on low speed after each addition.
Scrape down the sides and bottom of the bowl with a silicone spatula as needed.
Add the vanilla extract and almond extract and mix until combined.
4. Mix the Dry Ingredients
In a separate bowl, whisk together:
- Flour
- Baking powder
- Baking soda
- Salt
5. Combine the Batter
With the mixer on low speed, alternate adding the dry ingredients and sour cream (or Greek yogurt) in additions.
Add:
- Half the dry ingredients
- All of the sour cream or yogurt
- Remaining dry ingredients
Itโs okay if the batter still has a few lumps. Do not overmix.
6. Fold in the Sprinkles
Using a silicone spatula, gently fold the rainbow sprinkles into the batter.
Transfer the batter into the prepared pan and spread into an even layer.

How to Make the Crumb Topping
1. Mix the Crumbs
In a large bowl, combine:
- Melted butter
- Flour
- Brown sugar
- Granulated sugar
- Almond extract
- Salt
- Vanilla extract
Use a fork or your hands to mix until the texture becomes pebbly and crumb-like.
2. Add the Sprinkles
Mix in the rainbow sprinkles until evenly distributed.
3. Top the Cake
Sprinkle the crumb topping evenly over the cake batter.

Bake the Cake
Bake for 45โ50 minutes, or until the top is golden brown and a butter knife inserted into the center comes out mostly clean.
Allow the cake to cool slightly in the pan.
Using the parchment paper, carefully lift the cake from the pan and transfer to a cutting board or serving plate.
Dust with powdered sugar if desired, then slice into squares and serve.
