No-Bake Brownie Protein Balls
These brownie protein balls are what I reach for when I want something that tastes like straight-up brownie batter but still works as a quick, protein-packed snack. They’re fudgy, rich, chocolatey, and honestly hard to believe they’re made with simple pantry ingredients.
They fall into that perfect “healthy-ish dessert” category — the kind of recipe you can eat for breakfast, snack on in the afternoon, or grab after dinner when you want something sweet without turning on the oven.
The texture is soft and dense like brownie dough, and once they’re dipped in dark chocolate and finished with flaky sea salt, they basically turn into little bite-sized fudge truffles with benefits.
Perfect for meal prep, grab-and-go snacking, or keeping in the fridge for those moments when you just need something chocolate.

What You’ll Need
- Chocolate Protein Powder
This is the base of the recipe and gives the brownie flavor and protein boost. I use MRM Nutrition egg white chocolate protein powder for a rich, smooth taste. - Almond Flour
Adds softness and helps create that fudgy, dough-like texture. - Unsweetened Cocoa Powder
Deepens the chocolate flavor and makes these taste like real brownie batter. - Maple Syrup
Naturally sweetens the mixture and helps bind everything together. - Peanut Butter or Almond Butter
Adds richness, creaminess, and that classic fudgy brownie texture. - Milk (1–3 tbsp as needed)
Helps bring the dough together. The exact amount depends on your protein powder, so add slowly until the texture is just right.

Chocolate Coating & Topping
- Dark Chocolate (50g)
Used for dipping, giving a rich chocolate shell. - Coconut Oil (1 tsp)
Helps the chocolate melt smoothly and creates a glossy finish. - Flaky Sea Salt
Balances the sweetness and enhances the chocolate flavor.
Why These Work So Well
The combination of protein powder and almond flour creates a dough that’s thick, rich, and naturally fudgy without needing any baking.
The nut butter adds that brownie-batter softness, while maple syrup keeps everything lightly sweet and scoopable.
Once chilled and dipped in chocolate, they transform into something closer to a truffle than a protein snack — but still wholesome enough to keep in your fridge for everyday snacking.
Tips for the Best Brownie Protein Balls
- Add milk slowly — protein powders vary a lot
- Dough should be thick but rollable, not sticky
- Chill the dough before rolling if it feels too soft
- Use a small scoop for even-sized balls
- Freeze before dipping for cleaner chocolate coating
- Sprinkle salt immediately after dipping while chocolate is soft
Storage
- Store in an airtight container in the fridge for up to 1 week
- Freeze for up to 2–3 months
- Eat straight from the fridge for the best fudgy texture

Ingredients
For the Protein Balls
- 3/4 cup chocolate protein powder (about 75–85g)
- 3/4 cup almond flour (84g)
- 1/4 cup unsweetened cocoa powder (20–25g)
- 1/4 cup maple syrup (60ml)
- 1/4 cup unsweetened peanut butter or almond butter (64g)
- 1–3 tablespoons milk, as needed
For the Coating
- 50g dark chocolate
- 1 teaspoon coconut oil
- Flaky sea salt, for topping
How to Make Brownie Protein Balls
1. Make the Dough
In a large bowl, mix together:
- Chocolate protein powder
- Almond flour
- Cocoa powder
- Maple syrup
- Nut butter
Stir until a thick dough forms.

Slowly add milk, 1 tablespoon at a time, until the dough comes together and is no longer crumbly but not sticky.

2. Roll the Balls
Scoop and roll the mixture into bite-sized balls and place them on a parchment-lined plate or baking sheet.

3. Freeze
Freeze for at least 30 minutes until firm. This helps them hold their shape for dipping.
4. Melt the Chocolate
In a microwave-safe bowl, melt the dark chocolate with coconut oil in 20–30 second intervals, stirring until smooth.
5. Dip & Finish
Dip each protein ball into the melted chocolate and place back onto parchment paper.
Sprinkle immediately with flaky sea salt.

6. Chill
Refrigerate until the chocolate coating is fully set.
