Small Batch Pistachio Macarons

Macarons have a reputation for being one of the trickiest desserts to master, and most recipes make two or three dozen cookies—which can feel incredibly intimidating if it’s your first attempt. That’s exactly why I created this small batch version. You can practice the technique, build your confidence, and still end up with ten beautiful bakery-style pistachio macarons without using an entire carton of egg whites or a pantry full of ingredients.

This recipe uses a Swiss meringue method, where the egg whites and sugar are gently warmed before whipping. I love this method because it creates an incredibly stable meringue that produces smooth, shiny shells with beautiful feet. Filled with a silky white chocolate pistachio ganache made with Nuuva Pistachio Spread, every bite is rich, creamy, and bursting with nutty pistachio flavor.

Whether you’re making macarons for the very first time or simply looking for a smaller recipe to satisfy your craving, these little cookies are every bit as impressive as the ones you’d find in a French bakery.

Tips for Perfect Macarons

  • Always weigh your ingredients. A digital kitchen scale is essential for consistent macarons.
  • Use finely ground almond flour. If it seems coarse, pulse it briefly in a food processor and sift it before using.
  • Make sure your mixing bowl is completely clean. Even a tiny bit of grease can prevent your meringue from whipping properly.
  • Don’t overmix the batter. It should slowly flow off the spatula like lava. Overmixed batter will spread too much, while undermixed batter can produce lumpy shells.
  • Tap your trays firmly. This helps release trapped air bubbles that can cause cracked shells.
  • Don’t skip the resting time. Letting the shells dry before baking helps create the signature macaron feet.
  • Allow the shells to cool completely before removing them from the baking mats.
  • Be patient! Macarons actually taste even better after resting in the refrigerator overnight.

Storage

Store filled macarons in an airtight container in the refrigerator for up to 5 days.

For longer storage, freeze the filled macarons in an airtight container for up to 2 months. Thaw them overnight in the refrigerator before serving.

Frequently Asked Questions

Why did my macarons crack?

Cracked macarons are usually caused by shells that didn’t rest long enough, trapped air bubbles, or an oven that’s too hot.

Why don’t my macarons have feet?

This is often caused by under-whipped meringue, overmixed batter, or not allowing the shells to dry before baking.

Can I skip the pistachio extract?

Absolutely! The Nuuva Pistachio Spread provides plenty of pistachio flavor on its own, but the extract gives the shells an extra boost if you have it.

Why do macarons need to mature overnight?

Refrigerating the filled macarons for 24 hours allows the shells to soften slightly while absorbing moisture from the filling, creating that classic bakery-style chewy texture.

Can I make these ahead of time?

Yes! In fact, macarons are one of the best make-ahead desserts because they taste even better the next day.

Why is this a small batch recipe?

Most macaron recipes make anywhere from 20 to 40 macarons. This recipe makes just 10 filled macarons, making it perfect for practicing your technique, baking for two, or simply satisfying a pistachio craving without making dozens of cookies.

Here are a few of my favorite tools for making these Small Batch Pistachio Macarons:

Nuuva Pistachio Spread

Digital Kitchen Scale

Silicone Baking Mats

Half Sheet Pan

Disposable Piping Bags & Tips Set

Ingredients

For the Macaron Shells

  • 50 g egg whites
  • 38 g granulated sugar, divided
  • 50 g superfine almond flour
  • 50 g powdered sugar
  • ¼ teaspoon pistachio extract (optional)
  • 2–3 drops green gel food coloring
  • Pinch of fine salt

For the Pistachio Ganache

  • 50 g heavy cream
  • 125 g white chocolate, finely chopped
  • 1 tablespoon (about 18 g) Nuuva Pistachio Spread

Instructions

Step 1: Prepare the Baking Sheets

Line two baking sheets with silicone macaron baking mats.

Step 2: Make the Swiss Meringue

Fill a small saucepan with about 1 inch of water and bring it to a gentle simmer.

In the bowl of your stand mixer, whisk together:

  • 50 g egg whites
  • Half of the granulated sugar (about 19 g)

Place the bowl over the simmering water, making sure the bottom of the bowl doesn’t touch the water.

Whisk constantly for about 1 minute, until the mixture is warm, frothy, and the sugar has completely dissolved.

Transfer the bowl to your stand mixer.

Using the whisk attachment on high speed, slowly add the remaining granulated sugar.

Add the pistachio extract, green gel food coloring, and a pinch of salt.

Continue whipping until the meringue forms stiff, glossy peaks.

Step 3: Fold the Batter

Sift together the almond flour and powdered sugar.

Using a silicone spatula, gently fold the dry ingredients into the meringue until the batter flows off the spatula in slow ribbons, resembling lava.

Be careful not to overmix.

Step 4: Pipe the Shells

For this method, I just cut a small piece off the tip of the piping bag, insert it into a tall cup, and fill it with the batter.

Pipe 20 even circles, about 1½ inches in diameter, onto your prepared baking mats.

Firmly tap the baking sheets against the counter several times to release any trapped air bubbles.

Use a toothpick to pop any remaining bubbles.

Step 5: Rest

Allow the shells to rest for 15–30 minutes, or until they feel dry to the touch.

Meanwhile, preheat your oven to 300°F (150°C).

Step 6: Bake

Bake for 15 minutes, rotating the baking sheets halfway through baking.

Allow the macarons to cool completely before removing them from the baking mats.

Step 7: Make the Pistachio Ganache

Place the finely chopped white chocolate into a medium heatproof bowl.

Heat the heavy cream in a small saucepan until it just begins to simmer around the edges. Pour the hot cream over the white chocolate and let it sit undisturbed for 2 minutes.

Stir until the chocolate is completely melted and smooth. Add the Nuuva Pistachio Spread and mix until fully incorporated and silky.

Cover the ganache and refrigerate until it has thickened enough to pipe, about 30–60 minutes.

Once chilled, place a piping bag inside a tall glass or measuring cup and fold the top of the bag over the edges. This makes filling the bag much easier. Spoon the ganache into the piping bag, then remove it from the glass and snip a small opening at the tip. There’s no need for a piping tip—the small opening gives you plenty of control.

Pipe about ¾ to 1 teaspoon of pistachio ganache onto half of the cooled macaron shells.

Top with the remaining shells and gently press together until the filling reaches the edges.

Step 8: Mature

This resting period allows the shells to absorb just enough moisture from the pistachio ganache, creating the delicate crisp exterior and soft, chewy center that make macarons so irresistible.

For the very best texture and flavor, refrigerate the filled macarons for 24 hours before enjoying.

What #tip did you use to pipe the meringue shells?

Hi Maple! I used a Wilton 1M open star tip for the filling! 😊
