Easy Mixed Berry Crisp
Juicy berries bubbling underneath a buttery cinnamon oat crumble is pretty much the best way to use up the last of summer’s fruit. This easy mixed berry crisp is made with strawberries, blueberries, raspberries, and blackberries tossed with a little brown sugar, lemon, and vanilla, then covered in a golden oat topping.
It’s simple, cozy, and just sweet enough without covering up the flavor of the berries. And while technically you could eat it on its own, a couple scoops of vanilla ice cream melting over the warm crisp are highly encouraged.

Why You’ll Love This Mixed Berry Crisp
- Loaded with berries. Seven whole cups means you get plenty of juicy fruit in every serving.
- Not overly sweet. The filling uses just enough sugar to enhance the berries without making them syrupy-sweet.
- Juicy and jammy. Just 2 tablespoons of cornstarch thickens the filling while still keeping it soft and saucy.
- Buttery cinnamon crumble. Rolled oats, brown sugar, cinnamon, and melted butter make the easiest crunchy topping.
- No mixer required. Everything can be mixed together by hand.
- Perfect for summer. It’s such an easy way to use fresh berries before berry season officially comes to an end.
- Even better with ice cream. Warm crisp + cold vanilla ice cream = the entire point.
Ingredient Notes
Mixed Berries
I used a combination of strawberries, blueberries, raspberries, and blackberries, but you can adjust the ratios based on what you have. Just make sure you have about 7 cups total.
Fresh berries are my first choice, but frozen berries can work too. If using frozen berries, add them directly from the freezer without thawing first. The crisp may need a few extra minutes in the oven.
Granulated + Brown Sugar
Using both sugars gives the filling a little more depth than granulated sugar alone. There’s only ¼ cup granulated sugar and 3 tablespoons brown sugar, so the berries stay the star of the show.
Cornstarch
Just 1 tablespoon of cornstarch helps thicken all those berry juices while still keeping the filling soft, juicy, and jammy rather than overly thick.
Lemon
Fresh lemon juice brightens the berries while a little lemon zest adds extra fresh citrus flavor without making the filling taste lemony.
Vanilla
A teaspoon of vanilla rounds everything out and makes the berry flavor taste even sweeter without adding more sugar.
Old-Fashioned Oats
Use old-fashioned rolled oats rather than quick oats. They give the topping more texture and make those buttery clusters extra crisp.
Cinnamon
Cinnamon is subtle here—just enough to make the topping feel warm and cozy without overpowering the fresh berries.

Tips for the Best Berry Crisp
Don’t mash the berries. Toss everything together gently so the fruit keeps some texture while it bakes.
Leave the crumble chunky. Once you add the melted butter, stir just until clusters form. Those uneven buttery pieces are what make a really good crisp topping.
Don’t press the topping down. Sprinkle it loosely over the berries so the heat can circulate around the crumble and crisp it up.
Look for bubbling fruit. The crisp is ready when the berry filling is visibly bubbling around the edges and the topping is golden brown.

FAQ’S
Can I use frozen berries?
Yes! You can use frozen mixed berries without thawing them first. They may release slightly more liquid, so expect the crisp to need around 5–10 additional minutes in the oven.
Can I use different berries?
Absolutely. You can use any combination of strawberries, blueberries, raspberries, and blackberries. You could even make it entirely with one type of berry.
Why is my berry crisp watery?
Berry crisp will naturally be quite juicy straight out of the oven. Make sure you use the full 2 tablespoons of cornstarch and allow the crisp to cool for at least 15–20 minutes before serving. The filling continues to thicken as it cools.
Can I make this ahead of time?
Yes. You can prepare the berry filling and crumble topping separately, refrigerate them, and assemble the crisp shortly before baking.
What should I serve with mixed berry crisp?
Vanilla ice cream is my favorite. Whipped cream would also be delicious, or honestly, eat a scoop straight from the baking dish while standing in the kitchen. No judgment here.
Storage & Freezing
Store leftover mixed berry crisp covered in the refrigerator for up to 4 days.
For the best texture, reheat individual portions in the microwave for about 20–30 seconds or warm the baking dish in a 325°F oven until heated through.
You can also freeze baked berry crisp for up to 2 months. Let it cool completely before wrapping tightly or transferring portions to freezer-safe containers. Thaw overnight in the refrigerator and reheat before serving.
