Carrot Cake Waffles

Happy weekend, waffle lovers! If you’ve ever wished you could have a slice of carrot cake for breakfast and still call it wholesome — well, today’s your lucky day. These Carrot Cake Waffles are everything I love about dessert for breakfast: cozy spices, a touch of sweetness, and just enough nutrition to make you feel like you’re totally winning the morning.

Carrot cake has always been one of those comfort desserts for me — soft, warmly spiced, and full of texture from those sweet little flecks of grated carrot. (makes about 4 waffles)

  • 1 grated carrot (about ½ cup)
  • 2 eggs
  • ⅓ cup Greek yogurt
  • ½ cup milk
  • 1 tablespoon vanilla extract
  • 2 tablespoons brown sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ cup vanilla or unflavored protein powder
  • ¾ cup all-purpose flour
  • ¼ cup chopped walnuts or pecans (optional but so good!)

  1. Preheat your waffle iron and lightly grease it if needed.
  2. In a large mixing bowl, whisk together the eggs, Greek yogurt, milk, vanilla, and brown sugar until smooth.
  3. Add in your grated carrot and stir to combine.
  4. In a separate bowl, whisk together the flour, protein powder, baking powder, salt, cinnamon, and nutmeg.
  5. Combine the wet and dry ingredients, stirring gently until just mixed — don’t overmix!
  6. Fold in your chopped nuts if using.
  7. Pour the batter into your preheated waffle maker and cook according to the manufacturer’s directions until golden brown and crisp.
  8. Serve warm with your favorite toppings — maple syrup, a sprinkle of cinnamon, or a dollop of Greek yogurt for a little tangy balance.
