Gluten-Free Lemon Honey Olive Oil Cake

Ingredients
For the Cake
- 2¼ cups almond flour
- ½ cup tapioca flour (or arrowroot starch)
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 3 eggs
- ½ cup honey
- ⅓ cup olive oil
- ¼ cup lemon juice
- 2 tablespoons lemon zest
- 1 teaspoon vanilla extract
For the Lemon Glaze
- 1 cup powdered sugar
- 2 tablespoons lemon juice
- Optional: extra lemon zest for topping
Directions
- Preheat oven to 350°F. Grease a 9-inch pan and line the bottom with parchment paper.
- In a large bowl, whisk together the almond flour, tapioca flour, baking soda, and salt.
- In another bowl, whisk the eggs, honey, olive oil, lemon juice, lemon zest, and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Pour the batter into the prepared pan and bake for 28–30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before glazing.
- For the glaze, whisk together powdered sugar and lemon juice until smooth. Drizzle over the cooled cake and sprinkle with extra zest if desired.
