Tips for the Best Popcorn Treats Every Time

  • Use fresh popcorn for the best texture.
  • Remove any unpopped kernels before mixing.
  • Keep heat low when melting marshmallows so they stay soft.
  • Grease your spatula to prevent sticking while mixing.
  • Press gently into the pan to keep the bars soft and chewy.

Ingredients

Dry Ingredients

  • 10 cups buttered popcorn (about 80 g)
  • 2 cups Lucky Charms cereal (about 60 g)
  • ¼–⅓ cup St. Patrick’s Day green sprinkles (40–55 g) (I use ones from the brand Foliay!)

Marshmallow Mixture

  • 1 (10-oz) bag mini marshmallows (about 283 g)
  • 6 tablespoons unsalted butter (85 g)
  • 1 tablespoon vanilla extract (13 g)

Instructions

1. Prepare the Dry Ingredients

  • In a large mixing bowl, combine the buttered popcorn and Lucky Charms cereal.
  • Gently toss to distribute evenly and set aside.

2. Melt the Marshmallow Mixture

  • In a large saucepan over medium heat, melt the butter completely.
  • Add the mini marshmallows and reduce the heat to low.
  • Stir continuously until the marshmallows are mostly melted and the mixture is smooth and silky.
  • Stir in the vanilla extract.
  • Remove from heat while the mixture is still soft and glossy.

3. Combine Everything

  • Pour the marshmallow mixture over the popcorn and cereal mixture.
  • Using a greased spatula, gently fold everything together until well coated.

4. Add Sprinkles

  • Fold in about half of the sprinkles while mixing.
  • Reserve the remaining sprinkles for the top.

5. Press into the Pan

  • Lightly grease a 9×13-inch pan.
  • Transfer the mixture into the pan and gently press it down with a spatula.

Tip:
Soft press = soft bars. Avoid pressing too firmly or the treats can become dense.

6. Finish and Cool

  • Sprinkle the remaining sprinkles on top.
  • Allow the treats to cool completely before slicing into bars.

Make Ahead & Storage

Make Ahead

These treats can be made 1–2 days in advance, making them perfect for parties or holiday prep.

Simply store them tightly covered at room temperature until ready to serve.

Storage

  • Store in an airtight container at room temperature for up to 3 days.
  • Place parchment paper between layers to prevent sticking.
  • Avoid refrigerating them, as this can make the treats firm and less chewy.
