Vanilla Cake (Red, White & Blue Layers)
- 2 cups granulated sugar
- 1/2 cup extra virgin olive oil
- 3 large eggs
- 1 tbsp pure vanilla extract
- 1/2 cup Greek yogurt
- 2 1/2 cups all-purpose flour
- 3 tsp baking powder
- 1 tsp salt
- 1 1/4 cups milk
- Red and blue food coloring
Vanilla Buttercream Frosting
- 1 1/2 cups unsalted butter, cold
- 4 cups powdered sugar
- 1 tbsp pure vanilla extract
- 1–2 tbsp heavy cream or milk
- Pinch of salt

Method
For the Cake
- Preheat oven to 350°F. Grease and line three 8-inch round cake pans.
- Whisk together sugar, olive oil, eggs, and vanilla until smooth.
- Stir in the Greek yogurt until fully combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Alternate adding the dry ingredients and milk to the wet mixture, mixing just until combined.
- Divide the batter evenly into three bowls: dye one red, one blue, and leave one plain.
- Bake for 20–23 minutes, rotating pans halfway, until a toothpick comes out clean. Let cool completely before assembling.
For the Frosting
- Beat the butter until light and fluffy, 5–7 minutes.
- Add powdered sugar gradually, alternating with vanilla and cream, and beat until airy and smooth.
To Assemble
- Level cake layers if needed.
- Stack the blue, white, and red layers with buttercream in between.
- Apply a thin crumb coat, chill briefly, then frost the cake completely.
