Slice of confetti cake on white plate.

Ultra Moist and Fluffy Funfetti Cake

Funfetti is the cake that gets me every time. Thereโ€™s something about soft, fluffy vanilla-almond layers studded with rainbow sprinkles that instantly puts a smile on your face. Itโ€™s a cake that feels playful, celebratory, and comforting all at once. But hereโ€™s the thingโ€”Iโ€™m not about a mountain of frosting on this cake. I like it light, just enough to complement all that sprinkle-packed goodness, without hiding the fun inside each layer.

Every time I make this cake, I love the little moments: cracking the eggs, folding in the sprinkles, and watching those tiny bursts of color peek through the batter. Baking this cake always feels like a little celebration, even if itโ€™s just a Tuesday. Itโ€™s soft, moist, and has just the right amount of sweetness to let the sprinkles shine. Itโ€™s the kind of cake that makes mornings feel special, birthdays feel extra, and any ordinary day a little brighter.

This cake is perfect for all occasions, whether youโ€™re celebrating a milestone, making dessert for friends, or just want to treat yourself. Thereโ€™s something inherently joyful about seeing those sprinkles scattered throughout the layersโ€”itโ€™s like little confetti hiding inside your dessert, ready to surprise you with every bite. And with a light, airy buttercream frosting that adds just enough sweetness and richness without overwhelming the cake, itโ€™s the perfect balance of flavor, texture, and visual delight.

Itโ€™s also the kind of recipe that feels approachable, even if youโ€™re not a frequent baker. You donโ€™t need fancy tools or complicated techniquesโ€”just basic ingredients, a bit of patience, and a sprinkle of love. I promise, by the time you slice into this cake, youโ€™ll feel like youโ€™ve made something truly special.

Whether youโ€™re making this cake for a birthday, a weekend brunch, or just to celebrate a small victory, itโ€™s guaranteed to bring a little joy to anyone who takes a bite. And the best part? You donโ€™t need a special occasion to enjoy itโ€”sometimes, the best Funfetti cake is the one you make for yourself, just because.

Ingredients

For the Cake:

  • ยฝ cup unsalted butter, room temperature
  • ยฝ cup vegetable oil (I use avocado oil)
  • 1 ยผ cups granulated sugar
  • 4 large eggs, room temperature
  • 2 tbsp vanilla extract
  • ยฝ tsp almond extract
  • 3 cups cake flour
  • 1 tsp salt
  • 2 ยฝ tsp baking powder
  • 1 โ…“ cups buttermilk
  • ยฝ cup rainbow sprinkles

For the Frosting:

  • ยฝ cup unsalted butter, room temperature
  • 1 ยพ cups powdered sugar
  • 1 tsp vanilla extract
  • โ…› tsp salt
  • 1โ€“2 tbsp whole milk
  • 3 tbsp rainbow sprinkles

Instructions

Step 1: Prep the Oven and Pans

Preheat your oven to 350ยฐF. Grease two 8-inch cake pans and line the bottoms with parchment paper for easy removal.

Step 2: Make the Cake Batter

In a stand mixer fitted with a paddle attachment, beat the butter and oil together until smooth. Add the sugar and beat for 2โ€“3 minutes until fluffy and light. Mix in the eggs, vanilla extract, and almond extract until fully combined.

In a separate bowl, whisk together the cake flour, salt, and baking powder. Gradually alternate adding the dry ingredients and the buttermilk to the wet mixture, starting and ending with the dry ingredients. Fold in the rainbow sprinkles gently so they donโ€™t bleed too much color.

Step 3: Bake the Cake

Divide the batter evenly between the prepared pans. Bake for 30โ€“40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely before frosting.

Step 4: Make the Frosting

In a clean bowl with a paddle attachment, whip the butter until creamy. Gradually add the powdered sugar, vanilla, and salt, beating until fluffy. Add milk, 1 tablespoon at a time, until the frosting reaches your desired consistency. Stir in the sprinkles.

Step 5: Assemble and Decorate

Place one cake layer on a serving plate and frost the top lightly. Stack the second layer on top and frost the top and sides with a thin, even layer. Decorate with additional sprinkles for a cheerful finish. Slice and enjoy!

This Funfetti cake is light, colorful, and joyfulโ€”perfect for celebrations, a sweet treat with coffee, or just because life needs a little confetti. Each bite is soft, fluffy, and packed with sprinkles, making it the happiest cake youโ€™ll bake all year.
