Ingredient Notes
Cream Cheese
Use full-fat block cream cheese for the best texture. Make sure it is completely softened to room temperature so the filling mixes smoothly without any lumps.
Heavy Whipping Cream
The heavy cream helps whip air into the filling and gives these cheesecakes their light but creamy texture.
Blackberry Jam or Preserves
Blackberry jam adds concentrated berry flavor directly to the cheesecake filling. Either jam or preserves will work well.
Fresh Blackberries
Fresh blackberries are puréed with sugar and lemon juice to make the simple topping and are also used for garnish.
Fresh Lemon Juice
A little lemon juice brightens the blackberry flavor and balances the richness of the cream cheese.
Graham Crackers
Finely crushed graham crackers combined with melted butter create the buttery no-bake crust.
Tips for the Best Mini Cheesecakes
Use room-temperature cream cheese. Cold cream cheese can leave small lumps throughout the filling, so allow it to soften completely before mixing.
Give them enough chilling time. These cheesecakes need at least 4 hours in the refrigerator to firm up properly, but overnight is even better.
Whip the filling until thick. After adding the heavy cream, continue beating until the filling becomes thick and fluffy with a frosting-like consistency.
Wait to add the sauce. For the prettiest presentation, spoon the blackberry sauce over the cheesecakes shortly before serving.

FAQ’S
Can I make these mini cheesecakes ahead of time?
Yes! These are a great make-ahead dessert. Prepare and chill the cheesecakes the day before serving, then add the blackberry sauce and fresh berries shortly before serving.
Do I need a mini cheesecake pan?
No. These are designed specifically for a standard muffin pan lined with cupcake liners.
Can I use blackberry preserves instead of jam?
Yes. Blackberry jam or blackberry preserves will both work in the cheesecake filling.
How do I know when the filling is whipped enough?
The filling should become noticeably thicker after 2–3 minutes of mixing and should resemble a soft frosting.
Can I use frozen blackberries?
Fresh blackberries are best for the topping and garnish because they have the nicest texture and appearance. If needed, thawed frozen berries can be used for the sauce.
Storage
Store the mini cheesecakes in an airtight container in the refrigerator for up to 2 days.
For the best appearance, store the blackberry sauce separately and spoon it over the cheesecakes shortly before serving. Add the fresh blackberry garnish just before serving as well.

Ingredients
Graham Cracker Crust
- 6 full graham cracker sheets (about 93 g), finely crushed
- 3 tablespoons (42 g) unsalted butter, melted
Blackberry Cheesecake Filling
- 8 ounces (226 g) full-fat cream cheese, completely softened to room temperature
- â…“ cup (67 g) granulated sugar
- ½ cup (120 g) heavy whipping cream
- ¾ teaspoon fresh lemon juice
- 2 tablespoons + 2 teaspoons (about 53 g) blackberry jam or blackberry preserves
Blackberry Topping
- ⅔ cup (about 95–100 g) fresh blackberries
- 2 teaspoons granulated sugar
- 1¼ teaspoons fresh lemon juice
- Fresh blackberries, for garnish
Instructions
1. Prepare the Crust
Line 8 wells of a standard muffin pan with muffin liners.
Place the graham crackers in a food processor and pulse until finely ground. Add the melted butter and pulse again until the crumbs are evenly moistened.
Divide the graham cracker mixture evenly among the 8 muffin liners. Firmly press the crumbs into the bottom of each liner using the bottom of a small glass or measuring cup. Set aside.
2. Make the Blackberry Cheesecake Filling
In the bowl of a stand mixer fitted with the paddle attachment, beat the softened cream cheese and granulated sugar on medium-high speed until smooth and creamy.
Add the heavy whipping cream, lemon juice, and blackberry jam. Continue beating for 2–3 minutes, or until well combined and thickened to a consistency similar to frosting.

3. Assemble and Chill
Divide the cheesecake filling evenly among the 8 prepared muffin liners. Smooth the tops with the back of a spoon or small offset spatula.
Cover the muffin pan and refrigerate for at least 4 hours, or preferably overnight, until the cheesecakes are completely firm.
4. Make the Blackberry Topping
Add the fresh blackberries, granulated sugar, and lemon juice to a blender or food processor.
Pulse until completely puréed into a smooth fresh blackberry sauce.
5. Decorate and Serve
Once the cheesecakes are completely chilled and firm, carefully remove them from the muffin pan and peel away the liners.
Spoon the blackberry sauce over each cheesecake and garnish with fresh blackberries.
Serve chilled and enjoy!
